SIMPLE LEMON LOAF

We didn’t eat a lot of desserts when I was growing up.

Actually, that’s not entirely true.

There always seemed to be an endless supply of mincemeat pies and trifle hanging out in our fridge, but since I don’t enjoy either of those things, it felt like we never ate dessert.

If you're looking for dessert recipes that don't take a ton of time to prepare and bake, and that aren't heavy on the chocolate and sugar, this simple lemon loaf has your name written all over it. It's a timeless classic and tastes great with a bit of melted butter on top and a spot of tea on the side!

But every once in a while, when the mood struck her, my mother would make something delicious like her famous lemon loaf, and it would take all of my strength and willpower not to eat the entire thing in one sitting.

This loaf is simple to make and tastes delicious with butter and a spot of tea. Enjoy!
